Spanish Recipes - Tempting Tapas Dishes
Spain is famous for its tapas and, whichever Spanish bar youfrequent, in whichever area of the country, you are sure tofind them. So, what exactly are "tapas" and where did the name come from? Tapas are, essentially, snacks and the word literally means"cover". The name originates from the card which used to beplaced on top of your drink to protect it from the flies(this can be a hot country!). At some point in time, it became popular to place a littlesnack on top of this card. At first, this would just havebeen something simple like a few nuts and olives, or a freshslice of crusty Spanish bread plus topping. In those, not-so-far-gone days, the tapas were free! Thatis not usually the case these days, although you willoccasionally be presented with a small dish of crisps orolives to go with your drink. Nowadays, there is a wide variety of (paid) tapas, with some bars really going-to-town on them and offeringhighly original, magnificently presented snacks. But, even a fairly humble bar will present you with theopportunity to enjoy a slice of tortilla (Spanish omelette), boquerones (fresh, marinated anchovies preserved in olive oil and garlic), calamares (squid), champiñones al ajillo (garlic mushrooms), jamón serrano, Manchego cheese, etc. Are you keen on cooking? Then perhaps you would liketo try out this tapas potato recipe called "PatatasBravas". An old Spanish favorite, it is simple toprepare, using fairly basic ingrediants but, it shouldonly be savored by the courageous as it is quite spicy!Ingrediants are for four people. Ingrediants 750 g potatoes 1. Peel potatoes and cut into chunks. Grandmas Peach Canning Recipe Grandma loved to bake peach pies or top pancakes with peaches instead of syrup. During the summer months, she would buy baskets of seconds and freeze them. Freezing peaches was much easier and faster than canning them, so she rarely bothered with canned fruit. Since she didn't have a vacuum sealer, she used containers to hold her peaches. However, Nan, my mother, and I all use a vacuum sealer to prevent freezer burn. I really recommend this recipe over the more traditional peach canning recipe, because it is so simple to do and is not as dangerous as using a pressure canner. (Those things make me nervous.) I was a Beech-Nut kid, and breast-feeding wasn't my mother's idea of liberation. I was weaned on A&W root beer served by a car-hop at a local joint called "Suds n' Dogs." Straight Talk from a Comfort Foodie - Moms Remedy for the Blues As puberty crept up and I became a passive passenger on the roller coaster of hormones, there'd come days that I just couldn't shake the blues. It was a Jekyll and Hyde scenario that would haunt me for most of my fertile years. I never thought to look at the cause: my body was gearing up for a wham-bam of reproductive activity. I would only treat the symptoms, which were moodiness and the ability to bite someone's head off. My mother, Champion of Chocolate, held the key to my happiness. Staight Talk from a Comfort Foodie: World Peace Through Vegetarianism I became a vegetarian in the early 80's. The Czech refugee I had lived with forbade any meat products from entering the little hovel we called home. I didn't own a car then, and only traveled as far as my Raleigh three-speed English racer could take me. On Fridays that was to the home of a well-respected psychotherapist whose house I cleaned. When my chores were finished I'd welcome myself to her stocked pantry, and indulge on a simply prepared can of Star-Kist. I had to time that lunch well enough in advance of my homecoming as not to carry any lingering fish on my breath, otherwise I might not hear the end of a long speech about how Krishna may have incarnated into that same tuna that I had so ravenously devoured. |
